Easy Peasy Scones

These scones are honestly incredible. They bake up light, tall and fluffy, and are a yummy treat for breakfast or afternoon tea. Spread them with jam, double thick cream, butter, have them with cheese or simply eat them plain. They’re so delicious!

Carmen and I have been friends for close on 30 years. Yip, our 21 year young souls, have known each other before our parents even met (LOL) - We aren't dealing well with the big THREE OH approaching quickly.

We love a little cup of tea and some kind of treat. One of our favourite baked goods is a scone. Often we will be out the whole day, start off with "wine breakfast" (a little tradition of ours when we are in the same city), then maybe a spot of shopping and chatting. Then usually by 4pm our two little old souls need a nap. So we go and get some take-away cake or something, go home sit in bed with a cup of tea and devour our sweet snack before having a phenom nap.

So our love for naps and afternoon treats is really the foundation of our friendship, and really I wouldn't have it any other way!

Nothing beats a fresh scone EVER, but so often they are such a let down, even at the best bakeries I am always left feeling like it was a waste of calories. And when that is a crime if you ask me. But TRUST me these scones will never let you down and they are so flipping easy. There is no rubbing in of butter, no bicarb taste. Just pure deliciousness. Oil Scones

2 cups Cake Flour

1 Tbsp Baking Powder

Pinch Salt

60ml Oil

1 Egg

Milk to mix

1. Sift together flour, baking powder and salt.

2. In a measuring cup, measure out oil and crack in egg. Whisk together with a fork until combined well.

3. Add milk to the 200ml mark.

4. Add the wet ingredients to the dry ingredients, mixing well with a round-bladed knife. You can add more milk if necessary. You want the dough soft but not too sticky

5. Turn out on to a lightly floured surface and knead out cracks. Don't over knead, a few cracks are fine just not gaping craters.

6. Press out dough to about 1.5cm-2cm thick. Cut into shapes.

7. Place on a prepared baking tray and brush with beaten egg.

8. Bake at 180 for about 15-20 minutes until they are a beautiful golden brown underneath.
